Banana and walnut has to be one of my all-time favourites – I just can’t get enough of the stuff. It’s not only delicious but it’s also incredibly simple to make. Amazingly, the cake always turns out perfect – even when you decide to make it in the middle of the night and not completely sober (speaking from personal experience…. :)). Banana and walnut loaf is wonderfully moist and smells heavenly. Just writing about it makes me want to roll up my sleeves and get stuck into baking it.
What’s more, conveniently, this satisfying dessert doubles up as a breakfast treat; just spread on some Nutella or jam!
4-5 large ripe bananas
100g roughly chopped walnuts
115g softened butter
115g dark brown sugar
200g plain flour
2 tsp cinnamon
2 tsp baking powder
1 tsp bicarbonate of soda
A pinch of salt
A drizzle of olive oil
1.Preheat the oven to 180°C and line a 2lb loaf tin with greaseproof paper
2.In a large bowl mash bananas up with a fork
3.In a separate bowl, mix the butter, eggs and sugar together until smooth
4.Add mashed bananas and chopped up walnuts to the mixture then slowly sift in the flour, soda, baking powder, cinnamon and a pinch of salt- mix until smooth
5.Pour everything into the tin and bake for 60min. The loaf is ready when the skewer comes out clean.
