I always love to use fresh seasonal ingredients. At the moment, fig season is in full swing. You can find these little cuties in every supermarket and fruit stall around my city – making it impossible not to buy at least one when passing by. Well I decided to buy more than one and make a whole fig dedicated day of it!
……..I had gorgonzola and fig on toast for breakfast, pasta with figs and bacon for lunch and greek yogurt & fig cake as my after dinner dessert.
According to my family, the fig cake was a winner!
Greek yogurt & fig cake
4 tbsp all-purpose flour
400g greek yogurt
4 egg yolks
4 egg whites
100g brown sugar
1tsp grated lemon zest
lemon juice of ½ lemon
½ tsp orange extract
4-5 fresh figs
1.Preheat the own to 180C.
2.Beat the egg yolks with sugar and add sifted flour. Add the yogurt, lemon zest, lemon juice and orange extract and mix until combined.
3.Whisk the egg whites with a pinch of salt until stiff peaks form.
4.Fold the egg whites into the yogurt mixture.
5.Pour the mixture into the cake tin (22cm) and arrange the fig slices on top.
6.Bake for 50min until golden. Let it cool down completely before serving.
Enjoy the fig season while it lasts!
