Meringue Girls are the undisputed queens of these little cuties. They make meringue kisses in all colours of the rainbow. Unfortunately, making meringues is not as easy as it looks. You need just a few ingredients but you have to be very patient. They look and taste great so it’s worth it!
Basic recipe from Meringue Girls
90g egg white
180g caster sugar
1.Heat the sugar in the oven for about 5 -7 mins in 200C – it will dissolve quicker when added to the egg.
2.Whisk the egg whites with a hand mixer until stiff glossy peaks begin to form, then whisk in the warm sugar – spoon by spoon.
3.Whisk at full speed until the sugar has dissolved and the mixture is smooth and stiff.
4.Using a kitchen brush or a paintbrush paint stripes of the food coloring down the inside of the piping bag.
5.Spoon your meringue mixture into the piping bag.
6.Pipe the meringue onto prepared baking sheet – squeeze then release the pressure and pull up.
7.Bake at 100C for 30 – 40min until the kisses can easily be lifted off from the paper with their bases intact. Let it cool completely.
