Miffy lemon shortbread cookies

When I saw this Miffy cookie cutter on Instagram, I knew that I had to have it. I ordered it from Amazon right away and two weeks later it arrived from China.

P.S. I’m obsessed with cute things. Now to be completely happy, I just need a Miffy lamp!

Ingredients  (40 cookies)

150g plain flour

120g cold butter

50g icing sugar

½ tsp vanilla extract

1 egg yolk

1 tsp lemon zest

2 tbsp lemon juice

Method

1.Using your fingers mix together sifted flour, icing sugar and chopped butter until the mixture resembles breadcrumbs. Add egg yolk, vanilla extract, lemon zest and lemon juice. Knead the ingredients until you have a smooth dough ball. Wrap it up in cling film and leave it in the fridge for one hour.

2.Preheat the oven to 180°C

3.Place cooled dough onto lightly dusted with flour work surface and roll out to a thickness of about 0.7cm.

4.Cut the cookies with a miffy cookie cutter.

5.Bake for 10 minutes or until lightly golden and leave them to cool down.
