I’m sure that not everyone knows what whoopies are. They look like an oreo but that’s the only similarity. They’re actually an American treat which consists of two soft cookies with a creamy filling or a frosting sandwiched between them.
Yummy and cute treat for house parties!
Ingredients – frosting
125g room temperature butter
165g cream cheese (like Philadelphia)
335g icing sugar
Method
In a large bowl combine all the ingredients – using a hand mixer mix until smooth. Frosting has to be thick, refrigerate if necessary.
Ingredients – cakes
41g butter
65g brown sugar
30g eggs
116g flour
1 tsp soda
15g cacao powder
85g buttermilk
pinch of salt
Method
1.Preheat the oven to 210ºC.
2.In a large bowl combine sugar, eggs, flour, cacao powder, salt and soda – whisk for a few minutes and add butter. When it combines, add buttermilk and beat until smooth.
3.Transfer the dough to a pastry bag and pipe small circles into baking sheet about 5cm apart.
4.Bake for 8 – 10 min. Cool completely before filling.
5.Spoon frosting into a pastry bag. Pipe a dollop over flat side of one cookie. Top with the second cookie – flat side down. Refrigerate 30 min before serving.
