Banana Bread French Toast

What do I do with banana bread leftovers? Well, most of the time, I don’t have any leftovers because this delicious loaf disappears in one day. However, if I do have a couple of extra slices I make a French toast.

This version is a little bit trickier than the classic one. Banana bread can crumble more easily in the egg mixture, to avoid this remember to slice the bread into thicker slices.

Ingredients

2 slices of banana bread (recipe)

2 eggs

50ml milk

Β½ tsp ground cinnamon

2 tbsp butter

2 tbsp mascarpone

fresh or frozen berries

Method

1.In a medium bowl, whisk together the eggs, milk and cinnamon. Dip slices of banana bread into the mixture for about 20 second to coat completely.

2. In a skillet, melt the butter. Fry banana bread slices until golden on each side.

3. Serve with mascarpone and berries.
